Hace unos meses durante la fiesta de cumpleaños de Flor probé el daal de Anand, indio de origen y gran cocinero, y quedé enamorada. La anfitriona es argentina e hizo un maravilloso asado para todos los invitados, pero por algún motivo, debo tener aspecto de ser vegetariana (estoy bastante cerca de serlo) y en mis manos cayó un bol de daal como alternativa. Más feliz no pude ser. Tanto que durante el verano hice dos tantas de daal con sus respectivas sobras que pude volver a degustar los días siguientes. Es un plato que me encanta por su exotismo y por lo mucho que adoro la cultura india. También por su suave textura que se deshace en boca y por la mágica combinación de especias. No olvidemos su punto picante, que me activa siempre y pone de buen humor. Un plato sin duda sabrosísimo y maravilloso, y aunque parezca lo contrario, ideal para sobrellevar las calurosas noches de verano indias (y de cualquier lugar del mundo).

Ingredientes para el daal:

– 3 tazas de lentejas rojas secas (MassorDaal)

– 1 cebolla mediana cortada fina

– 1 taza de tomates cherry o 2 tomates medianos cortados a dados

– 3 dientes de ajo y el doble de jengibre rallado

– 1 cucharada de café de cúrcuma en polvo (o natural rallada)

– 1/4 cucharada de café de pimienta cayena

– 1 cucharada de café de semillas de comino

– 1 cucharada de café de comino molido

– 2 cucharadas de aceite vegetal (no de oliva que quedará muy fuerte)

– 30gr de mantequilla

– salpimentar a gusto

– añadir cilantro fresco cortado por encima para decorar y dar sabor

Limpia las lentejas rojas con agua fría de 3 a 5 veces (no hace falta dejarlas en remojo previo). Pon las lentejas en una sartén con 4 tazas de agua y trae a ebullición. Una vez empiece a hervir, baja a fuego lento, tápalo y déjalo reposar 30 minutos. Quizá debas añadir un poco de agua si las lentejas se han quedado muy espesas. Las lentejas deben estar bien cocidas (no al dente) y no deben mostrar resisencia cuando se muerden, tienen que estar suaves al paladar.

Una vez las lentejas estén cocidas, añade las especias (cúrcuma, pimienta cayena y comino en polvo) y remueve 5 minutos a fuego lento. Salpimenta. En otra sartén antiadherente calienta el aceite y añade las semillas de comino hasta que éstas queden tostadas o empiezen a explotar (cuidado que no se quemen). Si quieres que la mezcla quede más picante, añade chiles rojos a rodajas (que también pueden sustituir a la pimienta cayena en polvo). Cuando las semilllas estén marrones, añade la cebolla, ajo y gengibre y fríe hasta que todo se ponga dorado. Llegados a este punto, añade la mantequilla y los tomtes hasta que éstos se desintegren, alrededor de 3 o 4 minutos.

Junta las lentejas y los tomates y especias en una de las dos sartenes. Mezcla bien y déjalo a fuego lento unos minutos hasta que se amalgamen bien los ingredientes. Decora el daal con cilantro recién cortado y sirve inmediatamente con pan con mantequilla o con un naan idealmente.

Daal recipe in english:

Ingredients:

– 3 cups of dry red lentils (MasoorDaal)
– 1 medium white onion finely chopped
– 1 cup of cherry tomatoes or 2 chopped small tomatoes
– 3 cloves of garlic and twice the amount of ginger finely chopped
– 1 level teaspoon of turmeric
– ¼ teaspoon cayenne pepper (or amount to taste)
– 1 tablespoon of cumin seeds
– 1 level teaspoon of ground cumin
– 1 level teaspoon of ground coriander (optional, if you have it)
– 2 tablespoons of sunflower or vegetable oil (do not use olive oil)
– 30 grams of butter
– Salt to taste
– Chopped fresh coriander for garnish

 Rinse the red lentils with cold water for 3 to 5 rinses (no need to soak them).  Place the rinsed lentils in a saucepan with 4 cups of water and bring to a boil.  Once it boils, turn the heat to low, cover the pan,and simmer for 30 minutes.  You might need to add water towards the end if the lentils get too thick.  Taste the lentils to make sure they’re cooked through. They should not have resistance to the bite (not al dente), and be smooth on the palate.  

 Once the lentils are cooked, add all the ground spices (turmeric, cayenne pepper, ground cumin and ground coriander).  Mix the spices with the cooked lentils and simmer covered for another 5 minutes. Salt to taste at the point and set aside.

 Please monitor the following frying to make ensure the mixture doesn’t burn at any point, if it does start over.In a frying pan, heat the oil to medium-hot heat and add the cumin seeds.  Fry the seeds until they begin to brown or pop (remember not to let them burn). If you want to make it spicier, you can add 3 to 4 dried red chilies too.  You could also use these whole chilies alone instead of the cayenne pepper (they look nice in the dish). Once the seeds are brown, add the onions, garlic and ginger and fry until they begin to brown. At this point, mix in the butter and tomatoes and fry until the tomatoes disintegrate, about 3 to 4 minutes. 

 Once the fried mixture is golden brown and glistening, add this whole hot sizzling mix (oil/butter, cumin seeds, onions, garlic, ginger, tomatoes and chili if used) into the saucepan with the cooked lentils.  Return the pan to a low heat and cook for another 3 to 4 minutes stirring in the fried mixture into the lentils.

 Garnish the daal with the fresh chopped cilantro and serve immediately with buttered flatbread or naan. Enjoy!
